DIRECTIONS

Buckwheat is not related to wheat it is s distantly related to the rhubarb family and is a naturally gluten-free. It is a great replacement for recipes that use other flours that contain gluten. Buckwheat flour is great for quick breads and yeast breads. Since it does not contain any gluten-forming protein, it can not successfully be substituted cup for cup in bread recipes using wheat flour. However, you can substitute some buckwheat flour (up to about half the wheat flour) to boost the nutrients in your recipe.
