DIRECTIONS
Serving Size 2 pancakes: 2 eggs 3/4 cup water or milk (less for thicker pancakes) 1 cup gluten-free pancake mix Oil for frying 1 mashed banana (optional) In a medium bowl, whisk together eggs and water. Add in pancake mix. Let batter stand for 5 minutes while griddle heads. Ladle batter onto hot, oiled griddle. Top with maple syrup and fresh fruit. For thicker pancakes or waffles, use 2/3 cup water. For thin crepes, use 1-1/4 cup water or milk.
